Som Saa x Shep's + Wild Beer Co - Wednesday 21st
On the Wednesday of Sponfest, East London newcomers Shep's will be sharing the kitchen with Som Saa at The Axe to bring a very special, and very limited, menu of wild fermented Asian-inspired food, all paired with beers from Wild Beer Co.

Spent grain Panko breaded chicken thigh, coffee nukazuke pickle slaw, fermented rhubarb hot sauce, dried citrus kosho
Paired with Yadokai - A Yuzu, Seaweed & Sichuan Pepper pale ale. Taking inspiration from Yadokai, a sake-inspired 13% beer packed with umami character and yuzu, Yokai brings the delights of salty umami seaweed balanced with bright yuzu citrus.
Tempura fermented turnip, buckwheat tamari soy cream, persimmon vinegar
Paired with Breakfast of Champignons – Chanterelle mushrooms, Puy Lentils, Parsley & White Peppercorns
Fish cooked in lard, smoked oyster XO sauce, Lardo and pickled Rhubarb
Paired with The Blend 2017 - Wild Beer have taken the very best barrels from their extensive library and blended beer aged between 1 and 3 years in the barrel for a truly Gueuze-inspired beer.

Paired with Tom Yum Gose - Based on a Tom Yum soup recipe, hot and sour, but with the salty kick of a Gose - a traditional German-style sour wheat beer usually brewed with coriander and salt

Sai krok - Soured pork sausage with young ginger, peanuts, and cabbage
Paired with Dr Todd - An Islay Whisky Barrel-aged, strong citrus sour. It’s been brewed with ginger, some lactose sugar and aged in barrels with British Black Bee honey and finished with more ginger and lemon zest.
