A tasting with Tom Oliver
On Saturday 21st April, as part of the Fermented Farmers Market at The Axe, Tom Oliver will be giving an exclusive tutored tasting limited to 12 people from 2pm.
Tom Oliver of Oliver’s Cider and Perry from Ocle Pychard in Herefordshire has always championed “Minimum Intervention” cider making.

Based around the reliance on wild yeast fermentations without the use of sulphur prior to fermentation. Using a host of bittersweet and bittersharp cider apples with sugars, acidity and tannins, blended to make balanced, very drinkable ciders. Recently he has been involved in some ground breaking and imaginative collaborations with many brewers.
Garrett Oliver of Brooklyn Brewery conceived the Serpent and Thornbridge Brewery and Oliver’s put it into practice, then Tom from Brew by Numbers used some perry pear juice in their Pear Saison. Tom started working on a number of collabs with Jonny Mills of Mills Brewing which has so far yielded Foxbic, Saison Lees and Spectre Sister. Many more are in the pipeline including an imminent collab with Mills and Burning Sky. In the meantime, Tom has just released the 8th iteration of At the Hop, a draught only hopped cider
